Storing
If the product will not be entirely consumed within a week after delivery, keep the remainder in the refrigerator. Between 5º (41ºF) and 12º (53ºF).
The olive oil may thicken in the refrigerator. Keep the anchovies at room temperature for a few minutes until they return to their natural state.
Enjoying your tuna
We recommend using them for canapés, salad, cocas (tarts), bread with tomato and oil, pizzas, vegetable dishes and pasta sauces like puttanesca.

Processing
Made with anchovies of the Engraulis encrasicolus species from the Bay of Biscay. Anchovies are caught in spring by seine fishing and prepared using artisanal methods. They are rinsed in brine and selected by size. The heads and viscera are removed and the fish are salt-cured for at least six months. Then the scales and skin are removed and the flesh cut from the backbone to give two fillets from each anchovy. Finally, they are packed in olive oil.
